This professional white food colouring is fat soluble, perfect for use in pastry and chocolate work. The white food colour is made with a titanium dioxide base – and can also be stirred into the mix to whiten macarons, or other pastry desserts.
To use, mix the white chocolate colour together with melted white chocolate or cocoa butter melted at 35°C. Mix well and apply the coloured chocolate using a brush or chocolate spray gun. If using a spray, strain through a sieve before use. Use around 1tsp per 200g of chocolate or cocoa butter.
